Ingredients:
- Mezcal7.5 cl
- Lemon Juice2.2 cl
- Honey Ginger Syrup2.2 cl
- Whisky1.5 clScocth - Islay
- Ginger1 clPeeled & Sliced
Preparation mode:
Muddle ginger in the honey ginger syrup. Add lemon and mezcal. Add ice. Shake until hands are nearly frozen. Double strain into a rocks glass with a large ice cube. Slowly pour islay scotch whisky over the back of a spoon so it floats on top.
Honey ginger syrup recipe: Peel and slice about 6″ of ginger, add to 1 cup of clover honey and 1 cup of water into a saucepan. Bring it to a boil. Reduce to a simmer for 10-15 minutes. Let cool. Refrigerate overnight. Strain into container.
